In Paris boutiques that specialise only in one or two types of pastries are not rare and are actually becoming more widespread. L’éclair de génie (eclairs), She’s cake (cheese cakes), Popelini (puff pastries), to name just a few, focus on what they do the best. Aux Merveilleux de Fred made its name by selling slightly revisited traditional merveilleux cakes and brioches. Although I’m not a big fan of meringue, I need to admit that their merveilleux cakes are really good – they are much lighter than I would have imagined and brioches are simply amazing.
